The Mediterranean diet is considered one of the few diets that promote longevity and well being. Studies have shown that it can minimize the occurrences of cardiovascular disease and assist in weight management.
Veggies as a main dish or alongside main meals are a major part of this diet. In the video, Christina demonstrates how to make vegetable stuffed eggplants which are popular in Greece and can be found under the name Papoutsakia. Papoutsakia translates to ‘little shoes’ as the shape of this dish looks like the shape of a shoe. Traditionally, this recipe is made with béchamel sauce and mined meat but during lent, this recipe is altered to meet the diet restrictions during the lent period which is 40 days before Easter Sunday. As a result, this recipe is vegan friendly but also friendly to diets such as Keto and Paleo.
