Delicious Red Bell Pepper And Garbanzo Bean Croquettes

Here is a wonderful croquette recipe that will make your mouth water. Browned in the oven or use an air fryer for this recipe. We made them the other day and they disappeared in minutes. In fact, I’m going to make more today. And these croquettes are full of healing nutrition that will do your body good. These tasty nuggets are anti-inflammatory, lower cholesterol, full of protein, boost up our immune system, helps to prevent strokes, reverses heart disease, and also helps to prevent cancer. Make these croquettes for lunch or dinner and watch them disappear.

Another Whole-Foods Plant-Based Recipe

Ingredients:

4 – Cups of Organic Cooked Brown Rice

1 – Large Organic Red Bell Pepper – Chopped Fine

1 – Large Organic Carrots – Shredded

8 – Oz of Organic Garbanzo Beans – Mashed

1 – Cup of Organic Kale – Chopped Super Fine

1 – Medium Organic Yellow Onion – Chopped Very Fine

3 – Organic Salt-Free Veggie Bouillon Cubes

2 – Teaspoons of Organic Garlic Powder

1/2 – Teaspoon of Organic Turmeric Powder – For that nice yellow color

1/4 – Teaspoon of Organic Cayenne Pepper — If you don’t want them spicy leave this out.

Salt to Taste

Cook your rice as normal but half way through add your veggies and spices and cook just a bit more to make the rice a bit sticky. You want the croquettes to hold together as you brown them. Then let the mixture cool and form the mixture into 2 inches by 1/2 inch croquette shapes and place on a ceramic non-stick cookie sheet or in an air fryer.

Set the oven at 450-Degrees and leave in the oven until nice and brown about 45 minutes.

For an air fryer set the fryer at 400-Degrees and set the timer for 20 to 25 minutes.

Remove from the oven and let cool… if you can keep your hands off them long enough.

We used hot sauce for dipping and spicy mustard.

Makes About 3 Dozen Croquettes

Serves 6 People or 2 Hungry Guys
