Since I was a little girl, I remember that part of our bi-weekly meals included buckwheat. The family recipe since then has changed dramatically to include more vegetables and has improved enormously at the same time.
If you are going to make this recipe for the first time, it may seem strange but I would say give it a chance. It is worth it. It is a gluten-free ingredient which means it is friendly for Celiacs and individuals that are intolerant to gluten. Buckwheat is becoming popular as it is one of this Earth’s superfoods. It contains complex carbohydrates, making it perfect for individuals with type 2 diabetes but also is high in protein, fats, minerals, and antioxidants.
